Every now and again Kevin and I get major cravings for sweets and cookies. As athletes, we try to be healthy and avoid this type of junk food altogether, but we do have a great alternative for when those cookie cravings kick in! This too-easy-to-be-true cookie recipe is one we have enjoyed for years and you can make it with two simple ingredients that you probably have in your kitchen right now: bananas and oats.
If you want to get creative you can mix in a number of other treats. I usually add walnuts, almonds, and dried fruit. If I’m craving something extra decadent I will also add dark chocolate chips. Kevin actually enjoys eating these oaty nutty treats on the tennis court, he finds them fueling and easily digestible. With no added sugars or sweeteners, these cookies are actually a great alternative to the typical sugary granola bars people usually snack on. I enjoy them pre or post workout.
From start to finish, you can expect this to take about 20 minutes total. My personal favorite part of it all is that you can go ahead and pig out! Even if you have a whopping FOUR cookies, you are really only consuming one banana a half cup of oats. These are really a relatively guilt-free indulgence. With such healthy ingredients, you can even start your day with these treats; who doesn’t want to eat cookies for breakfast?!
